Nestled at 900–1,100 metres in the Bababudangiri range of the Western Ghats — a UNESCO-designated biodiversity hotspot — our partner estate breathes in the Malnad mist. The gentle monsoons of June and July arrive not as a deluge but as a slow, sustained rainfall that extends the cherry's development, building the aromatic complexity that defines true Chikmagalur character.
The soil here is deep red laterite — iron-rich, free-draining, and improverished enough that the bushes are pushed to struggle just enough to concentrate flavour. No irrigation. No shortcuts. The Arabica draws moisture from the mountain's own water table, producing cherries that ripen unhurried and unevenly across the branch — a mark of slow, natural maturation rather than forced yield.
This is the same terroir that first made Indian coffee famous among 17th-century Sufi traders and later British plantation owners. Today it produces the Kents Arabica variety — the same one your grandmother's filter coffee would have been made from, back when Chikmagalur supplied the cups of Mysore and Chennai.
The estate's selective harvest runs from November through January — hand-pickers move through the rows multiple times, picking only the fully red cherries at their peak. Those cherries are then sorted, floated in water to remove density defects, and spread across raised drying beds where they spend 18 to 25 days under the open Karnataka sky.
The result is a naturally processed, naturally sweet coffee that carries the estate's signature from cherry to container — fully traceable, never blended, arriving in Melbourne as a single homogeneous lot with one story to tell.
Ripe cherries are selectively harvested by hand — only the deep red, full-bodied fruit makes the cut. Unripe and overripe are returned to the bush.
Cherries are spread on raised drying beds under the Karnataka sun. Turned every few hours over 18–25 days until moisture hits 11%. The fruit's sugars infuse into the bean.
